Easy Crockpot Lasagna Recipe

I adapted this crockpot lasagna recipe from my Classic Italian Lasagna recipe (click the link for the recipe) which been in my family for generations. I make this crockpot lasagna for potlucks and weeknights. By the way, this makes a great school or work night dinner too!

Crockpot lasagna

I love that I can make this recipe in the crockpot insert it the night before a stick it in the fridge. Then the next morning before I leave for work I and pop it right into my crockpot on low. Don’t forget to use the Crockpot insert liners that make cleaning up your crockpot so easy, I love those things!

Easy Crockpot Lasagna Ingredients:

  1. 1 Box Lasagna Noodle
  2. 2 bags of Mozzarella Cheese
  3. 2 Tubes Italian Sausage
  4. 1 can of Diced Tomatoes
  5. 2 jars Tomato Sauce
  6. 1 Tbsp. Italian Seasoning
  7. 1 Tbsp. Chopped Garlic
  8. 1 Tbsp. Basil
  9. 1 Tbsp. Oregano
  10. 1 Container of Parmesan Cheese
  11. 1 16oz. Container of Ricotta Cheese or Cottage Cheese (1 egg per pound)

Crockpot Lasagna Instructions:

  1. Put the uncooked meat in a large pot to cook, when finished drain any grease from the pot.
  2. Place the meat back in the pot and add diced tomatoes, tomato sauce, Italian seasoning, garlic, basil, oregano, and parsley.
  3. Cook until the sauce mixture is bubbly.
  4. The mixture needs to be runny because the noodles will absorb the liquid when they cook. If there is no moisture for the noodles to absorb the lasagna will burn.
  5. In a large bowl mix the egg, 2 cups mozzarella, and ricotta or cottage cheese.
  6. Put the crockpot liner bag in your crockpot for easy clean up later.

Crockpot Lasagna Layers:

  1. Sauce mix, noodles (you will have to break the noodles to make them fit and to prevent large pieces of noodles from curling up), cheese mix, and repeat.
  2. Each layer of cheese mix should be a sprinkling of shredded mozzarella, a few scoops of cheese mixture thrown on randomly, and shake some Parmesan cheese.

Top Lasagna Layer:

  1. Lasagna noodles and sauce mix.
  2. Cook on high for 2 hours or 6 hours on low.
  3. 15 minutes before serving top with cheese.
