Easy Classic Italian Lasagna

This Classic Italian Lasagna recipe has been in my family for generations. It was brought to America by my Grandmother from Italy after World War II. I make this lasagna on a regular basis for my family. You can even make an extra pan ahead of time put it in the freezer for later!

To make this recipe easier to make you can use Oven Ready Lasagna Noodles. If you haven’t heard of them that y are awesome! You don’t have to pre-boil your noodle which saves you time and burnt fingers from handling hot slippery noodles. You can find these noodles at any supermarket in the pasta aisle.

I also have a slight variation of this recipe for people who don’t like Ricotta cheese. I know some people do not enjoy the gritty texture of Ricotta cheese. To fix that problem you can easily replace the Ricotta cheese with Cottage cheese. It is an equal one-to-one swap out from Ricotta to Cottage cheese. I know that a Classic Italian Lasagna doesn’t use Cottage cheese but it does provide an option for a smoother lasagna.

Creamy White Chicken Lasagna

Try this unique delish spin on the classic lasagna. This Creamy White Chicken Lasagna is another family favorite and makes a great comfort meal. I also use this recipe as a great freezer meal for pot lucks and dinner guests.

Chicken Parmesan with Creamy Polenta

This is the Chicken Parmesan recipe I saw on my favorite cooking show on the Food Network. My family and I enjoy watching Diners, Drive-ins, and Dives during the weekends. During the Takeout: Home Delivery episode this Chicken Parmesan recipe was featured from Catelli’s restaurant. Since we couldn’t go out to dinner on Mother’s Day. Plus, there was no way to order this dish all the way in California from Ohio. My husband and son made this Chicken Parmesan instead.

I can say this year’s Mother’s Day was a little more eventful than the others. Even though we didn’t get to leave the house but my husband did cause a small fire in my kitchen. Everyone is ok, and we were able to get the fire under control quickly! No real damage except for that piece of chicken and my son got to learn how to handle a small kitchen fire. Definitely a Mother’s Day I will never forget!

Easy Crockpot Lasagna

I adapted this crockpot lasagna recipe from my Classic Italian Lasagna recipe (click the link for the recipe) which has been in my family for generations. I make this crockpot lasagna for potlucks and weeknights. By the way, this makes a great school or work night dinner too!

I love that I can make this recipe in the crockpot insert it the night before a stick it in the fridge. Then the next morning before I leave for work, I pop it right into my crockpot on low. Don’t forget to use the Crockpot insert liners that make cleaning up your crockpot so easy, I love those things!
