This recipe is quick and easy to make, plus is a great low carb Keto option for chicken enchiladas! My husband and kids love these crockpot chicken enchiladas. This recipe a win-win for a busy mom like me and I know you will love it too! These crockpot chicken enchiladas make a quick and easy school or week night dinners!
I love that I can make this recipe in the crockpot insert it the night before a stick it in the fridge. Then the next morning before I leave for work I and pop it right into my crockpot on low. Don’t forget to use the Crockpot insert liners that make cleaning up your crockpot so easy, I love those things!
I love coming home from work to find my dinner already cooked! That way, I can simply enjoy the evening with my family. This recipe works with any slow cooker or Instant Pot too!
Time Saving Tip: You can can also put this Crockpot Chicken Enchiladas recipe in a gallon size zip lock bag and through it in the freezer for you freeze meal stash!
Keto Crockpot Chicken Enchiladas Ingredients

- 2 lbs. Boneless Chicken Breasts
- 3 Cups of Salsa (1 -16 oz. jar of salsa will do nicely.)
- 1 Tbsp. Chopped Garlic
- 2 Tbsp. Dry Cilantro
- 1 Tbsp. Onion Powder
- 2 Can 10 oz. Enchilada Sauce
- 3 Cups of Shredded Cheese
- Optional toppings: Sour Cream, Fresh Chopped Cilantro, Avocado, Keto Friendly Tortillas or Keto Friendly Chips.

Keto Crockpot Chicken Enchiladas Instructions
- Put the crockpot liner bag inside your crockpot.
- Place the chicken into the crockpot, inside the crockpot liner bag.
- In a large bowl mix the enchilada sauce, salsa, garlic, onion power, and cilantro.
- Pour the sauce mixture over the boneless chicken breast.
- Set the crockpot temperature low for 8 hours.
- When the chicken is done cooking, put it on a baking sheet covered with aluminum foil.
- Shred the chicken with a forks or a pasta fork. (The teeth on a pasta fork works great for this!)
- Put the shredded chicken back in the crockpot and add the cheese.
- Stir the cheese in and cook for an additional 15 minutes until the is melted and combined into the mix.
Serve with optional toppings: Sour Cream, Fresh Chopped Cilantro, Keto Friendly Tortillas, Avocado, or Keto Friendly Chips.
